Hey everyone! I’ve been a little MIA this week but I’m back with another recipe. I got a lot of interest in these baby cookies so I wanted to do another easy baby led weaning recipe for everyone.
I came across this recipe on Pinterest so thought I’d give it a try. I’m so glad I did because it was so simple and only used 2 ingredients! It’s also gluten, dairy and sugar free!
All you need is one egg and one ripe banana. I also used coconut oil to fry them but I’m sure butter would work too.
First mash the banana.
Next beat the egg in a bowl then add the mashed bananas.
Heat the coconut oil in a frying pan on medium heat and drop tablespoons of the mixture into the pan. Cook for 2 minutes or until light brown on each side and enjoy. This made 9 pancakes.
She was a little apprehensive at first but I think she came around.
These pancakes were awesome. They only took a few minutes to make, came out really soft and were easy for my little one to eat. They are also super healthy and she loved them!
To add a little extra to the meal, top with plain Greek yogurt and bananas!

- 1 ripe banana

- mash banana
